First: Doussot Bourdot — a Champagne I discovered at Printemps and honestly could not stop thinking about. Powerful, oxidative, salty. One of the most exciting young-grower Champagnes I have tasted in a long time! Still somehow under the radar.
Then: Kissinger-Bähr Chardonnay 2024. Back at BTB after two years. Smoky reduction, beautiful length, and that magic confusion between Jura, Burgundy and something completely its own.
And finally: Maison Glandien — our Burgundy all-star — with an Aligoté that is anything but polite. Sharp, salty, alive. Aligoté with teeth.

Champ Fremyot 2022
Doussot-Bourdot - Loches-sur-Ource, Champagne
Billy Doussot is one of those young Côte des Bar growers who immediately make you pay attention. Based in Loches-sur-Ource, he took the family domaine into a new chapter in 2021 and started bottling his own Champagnes. Champ Fremyot is a 2022 vintage Champagne, 100% Pinot Noir from the lieu-dit of the same name, grown on Kimmeridgian limestone and brown calcareous soils, then vinified and aged for 10 months in 228L barrels.
And yes — you feel the oak. Clearly. Sensationally. It gives the wine depth, grip and real architecture. The wine is oxidative, salty, powerful and unbelievably long. Not cute, not polished, not trying to please everyone. Just a serious, charged Pinot Noir Champagne with force.
Chardonnay 2024
Kissinger- Bähr - Nierstein, Rheinhessen
Moritz and Jasmin Kissinger-Bähr are quietly making some of the most exciting new-wave whites in Germany. Based in Uelversheim, Rheinhessen, they work biodynamically and with a very clear idea: freshness, texture, origin and zero boring polish. Their Chardonnay 2024 comes from loess and limestone soils, is spontaneously fermented and aged in used barrique — and you feel that immediately. Smoky reduction, salty tension, serious length. It has that beautiful confusion where people start guessing Jura, Burgundy, Germany — and honestly, that is exactly the magic. After two years away from BTB, Kissinger-Bähr Chardonnay is finally back.
La Moiré 2024
Maison Glandien - Meursault, Burgundy
La Moiré 2024 is exactly why I will never get tired of serious Aligoté. From Cheilly-lès-Maranges, planted in 1991 on clay-limestone soil, west / north-facing, and produced in ridiculous quantities: only four pièces. The grapes are picked in the cold morning, directly basket-pressed, settled in stainless steel and then moved with all their lees into Stockinger barrels. Native yeast, no sulphur during fermentation, full-lees ageing, little sulphur at bottling, no fining, no filtration. And yes — 50% new oak. Because this is not treated like Burgundy’s little side grape. It is sharp, salty, textured and electric, but with real substance and grip behind the tension. This is Aligoté with teeth — and Maison Glandien doing exactly what Maison Glandien does best: making the quiet grape suddenly feel dangerous.
